KARANDI OMELETTE



Karandi omelette is a famous south Indian dish and can be prepared within minutes. Omelette is cooked in karandi or small tadka pan. This omelette is different from our usual omelette in terms of shape, and am sure kids and adults will love and enjoy. You can also stuff grated or cooked veggies/chicken/mutton/prawn of your choice and make stuffed karandi omelette. This karandi omelette can be served as such, and also pairs well with Sambar/Rasam Rice.

PREPARATION TIME : 5 minutes

COOKING TIME         : 5-7 minutes

INGREDIENTS:(serves 4 persons)

  • Eggs                                         - 4
  • Onion large size                     - 1
  • Green chilli                             - 1
  • Chopped coriander leaves   - 2 spoons
  • Turmeric powder                   - 1/4 spoon
  • Red chilli powder                   - 1/2 spoon
  • Pepper powder                      - 1/2 spoon
  • Oil                                             - 4-5 spoons
  • Salt

DIRECTIONS:

1. Get ready with all the ingredients. Finely chop the onion and green chilli.


2. In a mixing bowl add finely chopped onions, green chillies, coriander leaves, turmeric powder, red chilli powder, pepper powder and salt. Mix well.


3. Add the eggs and mix well using fork or whisk.


4. Heat a tadka pan and add 1-2 spoons of oil and spread the oil all over the tadka pan by slightly rotating. (Tip: You can also use brush and apply oil.)


5. Using ladle add the egg mixture into the tadka pan. (Note: Fill up to 3/4th of the pan. Do not overload.)


6. Cook for 2-3 minutes in a medium flame, flip to other side using spoon and cook for 2-3 minutes, or until it turns golden brown on both sides. (Note: Keep an eye on it, do not burn.)


7. Once cooked, transfer to plate, serve hot and Enjoy!


ADDITIONAL TIPS:

=> I have not added any masalas. If you wish you can add pinch of garam masala, chat masala or any masalas to enhance the taste and flavour of the omelette.

=> You can also add some chopped mint leaves, to enhance the taste and flavour of the omelette.

=> If serving for children avoid green chillies.
