Chettinad Special Parupu Varuthu Munuki Sambar is a side dish which pairs good with hot steamed Idli and Dosa. The roasted and freshly ground dal powder gives nice flavour and taste to the sambar. This flavorful parupu varuthu munuki sambar is quick and easy to prepare with easy available ingredients. This sambar tastes yummy and delicious. We personally fall in love with this sambar, am sure kids will Enjoy too.
PREPARATION TIME : 5 minutes
COOKING TIME : 15-20 minutes
INGREDIENTS: (serves 4 persons)
- Onion medium size - 2
- Tomato large size - 1
- Toor dal - 6 spoons
- Red chilly - 2
- Fennel seeds/sombu - 1 spoon
- Chopped coriander leaves - 1 spoon
- Tamarind water - 100 ml
- Water - 400 ml
- Salt
For Tempering:
- Mustard seeds - 1/4 spoon
- Urad dal - 1/2 spoon
- Chana dal - 1/2 spoon
- Cumin seeds/jeera - 1/2 spoon
- Curry leaves - 5-6 leaves
- Oil - 2 spoons
DIRECTIONS:
1. Get ready with all the ingredients. Soak small lemon sized tamarind in water and squeeze and collect the extract. Finely chop the onions and tomatoes.
13. Finally add chopped coriander leaves and switch of the flame.
=> Freshly roast the dal and prepare the powder, whenever you prepare. This gives nice flavour and taste to the sambar.
=> My red chilly is spicy. So I have added two. The specified amount of red chilli is sufficient for me. If you need more or less spicy adjust the quantity accordingly.
=> You can also add one slitted green chilly while sauteing, it gives nice flavour and increases the spiciness. Its purely optional.
=> If your sambar is more spicy, to reduce the spiciness add 2-3 spoons of idly batter in 50 ml water dilute well and add to the sambar. Do not add more idly batter it may hinder the exact taste of the sambar.
=> You can also add veggies like potato and carrot to this sambar, to make it more healthy. Finely slice carrot and potatoes and add to it, so that it can be cooked well.
