POTATO MASALA/CURRY

South Indian style Potato masala is one of the easiest masalas that can be made, and pairs good with South Indian breakfast recipes like poori, dosa, idly and chapati or roti. The yummy colourful potato masala has nice aroma and it is everyone’s favourite. The potato masala/curry can be made in "n" number of ways with slight variations.

PREPARATION TIME : 10 minutes

COOKING TIME        : 25 minutes

INGREDIENTS: (serves 4 persons)

  • Potato medium size         - 4
  • Onion medium size          - 3
  • Tomato medium size       - 2
  • Green chillies                    - 2
  • Red chilli powder             - 3 spoons
  • Garam masala                  - 1 spoon
  • Turmeric powder             - 1/2 spoon
  • Ginger garlic paste           - 1 spoon
  • Water                                 - 700 ml
  • salt

To Temper:

  • Oil                            - 3 spoons
  • Mustard seeds      - 1/2 spoon
  • Urad dal                  - 1 spoon
  • Channa dal             - 1 spoon
  • Curry leaves           - 6-8
  • Bay leaf                   - 1
  • Cinnamon stick      - 2
  • Kalpasi                    - 1
  • Cloves                     - 2
  • Star anise               - 2 small piece

DIRECTIONS:

1. Wash the potatoes well in water and pressure cook for 3- 4 whistles in medium flame. Mash the boiled potatoes.

2. Get ready with all the ingredients.

3. Heat oil in a kadai. Add all the ingredients listed under “To Temper“. Let them crackle.


4. Add finely chopped onions, tomatoes, and green chillies (slitted) and saute well till the tomatoes turn soft and mushy.


5. Add ginger garlic paste, red chilli powder, garam masala, salt and turmeric powder. Mix well.


6. Add 700 ml water and bring to boil.


7. Once the water comes to rolling consistency add the boiled and mashed potatoes. Mix well.


8. Cover and cook for 15 minutes in low flame, until the potatoes absorb all the flavour.


9. Garnish with coriander leaves and The tasty potato masala is ready to serve. (Tip: Adjust the consistency of the potato masala as per your requirement.)


ADDITIONAL TIPS:

=> The specified amount of spiciness is sufficient for me. If you need more or less spicy adjust the quantity accordingly.

=> You can also add 1/2 spoon of chat masala at the end, to enhance the tangy and spicy flavour of the dish.

=> I usually add less amount of dry spices. If you want you can add some more.
