Omapodi/Sev - Easy Snack at Home by GayuMuthu


Omapodi/Sev is a good tea time snack to munch with family members. It can be made easily and quickly with few ingredients.

PREPARATION TIME - 5 minutes

COOKING TIME        - 15 minutes

INGREDIENTS ( Serves - 2-3 persons ) :

· Besan flour/Kadalai maavu/Gram flour      -  1 cup

· Rice flour/ Idyappam flour                            - 1/4 cup

· Ajwain seeds/Carom seeds/Omam             - 1 tablespoon

· Turmeric powder                                            - 1/4 spoon

· Hing/Asafoetida                                              - 1 pinch

· Salt as required

· Oil for deep frying

· Water

DIRECTIONS:

1. Add the specified quantity of the above mentioned flours along with 2 spoons of hot oil in a mixing bowl and mix well. Crush/grind the ajwain seeds to a fine powder and add them to the bowl.

2. Add water gradually and make a smooth dough.

       (Tip: If the dough is sticky add some besan flour and  If the dough is dry add some water and knead well.)

3. Heat oil in a Kadai in medium temperature. 

       (Tip: Drop a tiny piece of dough in a oil. If it comes up steadily and gradually on top , the oil is hot enough to fry.)

4. Use the disc with fine holes in a sev/muruku maker for omapodi/sev. Apply some oil in the sev/muruku maker and add some portion of dough inside the maker.

5. When the oil is hot enough, directly press holding the sev maker on top of the oil and let the sev directly fall in the oil.

       Note: Do not overcrowd the kadai with omapodi/sev.

6. After adding the omapodi/sev in the oil do not touch them immediately allow it to fry for a minute. Once one side is done turn next side and allow it to fry.

7. When the oil stops sizzling and the omapodi/sev are golden and crisp, remove them from the oil using slotted spoon.

8. Place them on the kitchen paper towel to drain off the excess oil. Repeat the process for the remaining dough.

9. Once the omapodi/sev are cooled, break the omapodi/sev now and store them in a airtight container or box.

ADDITIONAL TIPS :

=> If you need spicy omapodi/sev then you can add chilli powder to the dough as per your requirement.

=> You can also add a pinch of baking soda for more crispiness.

=> Be careful when pressing the omapodi/sev in the oil. Do not break the omapodi/sev while frying, then it will be difficult to collect the small omapodi/sev pieces from the oil.
