Restaurant style- EGG FRIED RICE


Restaurant style-EGG FRIED RICE is a dish which is prepared by stir-frying veggies along with eggs and cooked rice. This delicious and nutritious egg fried rice is mildly spicy and it can be done within 30 minutes. This egg fried rice comes out well every time and its quite easy too. This is one of my family’s favourite and I used to prepare often. This egg fried rice can be served with Gobi/Baby corn/Cabbage Manchurian or simply with ketchup. I served Egg fried rice with Cabbage Manchurian.

PREPARATION TIME : 10 minutes

COOKING TIME         : 15 minutes

INGREDIENTS: (serves 2 persons)

  • Cooked basmati rice    - 1 cup
  • Eggs                                - 3
  • Onion large size            - 1
  • Cabbage                         - 1/4 cup
  • Carrot                             - 1/4 cup
  • Green beans                 - 1/4 cup
  • Garlic cloves                 - 2
  • Green chilli                    - 1
  • Pepper powder            - 2 spoons
  • Oil                                   - 4 spoons
  • Salt

DIRECTIONS:

1. Heat 2 spoons of oil in a kadai. Add 3 eggs, 1/2 spoon salt and 1 spoon crushed pepper.  Saute well and prepare scrambled eggs.


2. Soak Basmati rice for 20 minutes. Drain the water. Pressure cook 1 cup  basmati rice with 2 cups water for 2 whistles in high flame. Spread the cooked rice in plate and allow it to cool.  (Tip: While cooking rice add 4 drops of oil, to avoid sticking of rice to each other.)

3. Get ready with all the ingredients.


4. Heat oil in a kadai. Add finely chopped garlic and slitted green chilli. Saute well until garlic turns light brown color. (Tip: You can also add ghee, to enhance the flavour of the rice.)


5. Add the finely chopped onions, carrot, cabbage, green beans and salt. Mix well. (Note: Already we have added salt while preparing scrambled eggs.)


6. Add freshly crushed pepper powder. Mix well. Cover and cook for 5-7 minutes in high flame. (Tip: Stir occasionally, to avoid burning of veggies.)


7. Once the veggies are 80% done. Add scrambled eggs and cooked basmati rice. Mix gently without breaking the rice. (Tip: Do not over cook the veggies.)


8.  Finally, add some crushed pepper. Give a quick stir.


9. Transfer to a plate and Serve Egg fried rice with any Manchurian or ketchup.


ADDITIONAL TIPS:

=> For preparing Chinese items, the flame should be kept high.  Keep stirring to avoid burning.

=> I have used green chilli and pepper powder for spiciness. You can also add red chilly sauce. The freshly ground pepper powder gives nice flavour to the rice.

=> You can add 1 spoon tomato ketchup and 1 spoon soya sauce while sauteing veggies, if you like tangy flavour.

=> The specified amount of spiciness is sufficient for me. If you need more spicy increase the quantity of green chilli and pepper powder.

=> Add spring onions, it gives nice Chinese flavour to the rice.

=> I have not used vinegar and ajino motto. If you need you can add while sauteing veggies.
