URAD DAL PORRIDGE (ULUNTHAN KANJI)

Urad dal porridge/Ulunthan kanji is a healthy porridge made using black urad dal and rice as main ingredients. Black urad dal holds a high protein value than most of the legumes, and is also an excellent source of dietary fiber, isoflavones, vitamin B complex and iron and calcium. This kanji helps to strengthen bones, and is simple and easy to prepare. This tasty and nutritious ulunthan kanji is loved by all ages and, is highly recommended to include in your diet at least twice in a month. 

PREPARATION TIME : 5 minutes

COOKING TIME         : 15 minutes

INGREDIENTS: (serves 4 persons)

  • Black urad dal (split ones)   - 1 cup (125 ml)
  • Boiled Rice                             - 1 cup (125 ml)
  • Fenugreek Seeds                  - 1/4 spoon
  • Garlic Cloves                          - 4
  • Boiled Milk                             - 200 ml
  • Grated Coconut                     - 1/4 cup (62.5 ml)
  • Water                                      - 1400 ml
  • salt

DIRECTIONS:

1. Get ready with all the ingredients.


2. Wash urad dal and rice 3- 4 times with water. Strain the water and keep aside.


3. Heat 1400 ml water in a pressure cooker and add rice, black urad dal, fenugreek seeds, chopped garlic cloves and salt. Mix well. (Tip: Taste the water, the water should be slightly salty.)


4. Cover and cook for 2 whistles in a high flame. Sim the flame and cook for 8-10 minutes. Switch off the flame.


5. Once the pressure releases open the lid and mash with wooden hand masher. (Note: You can use any masher you have.)


6. After mashing add room temperature boiled milk. Mix well. Check for salt. (Tip: Adjust to the required porridge consistency, if needed add more water.)


7. Add grated coconut and mix well. Serve hot with garlic/tomato chutney and Enjoy!.


ADDITIONAL TIPS:

=> I used splitted ones you can also use whole black urad dal. You can also use white urad dal.

=> I have used boiled rice you can use any rice of your wish.

=> I used boiled milk and grated coconut. You can also add coconut milk.

=> The fenugreek seeds, grated coconut and garlic enhances the flavour of the urad dal porridge.

=> The boiled milk gives nice taste to the kanji. Its optional you can use water also.
