CARROT BROCCOLI SOUP

Low carb Carrot Broccoli Soup is a super healthy and tasty soup. This soup is liked by all ages and can be prepared in less than 20 minutes. When down with cold I turn to this warm carrot broccoli soup. Broccoli is a good source of fiber and protein, and contains iron and vitamins A, C, E, K and a good array of B vitamins including folic acid. Carrot is rich in fiber, and have calcium and vitamins A and K.

PREPARATION TIME : 5 minutes

COOKING TIME         : 15 minutes

INGREDIENTS: (serves 4 persons)

  • Broccoli large size               - 1
  • Carrot medium size            - 2
  • Onion small size                  - 1
  • Butter                                   - 1 spoon
  • Bay leaf                                - 1
  • Cinnamon stick small         - 1
  • Cloves                                   - 2
  • Star anise small pieces      - 2
  • Crushed black pepper       - 2 spoons
  • Water                                    - 800 ml
  • Coriander leaves (optional)
  • Salt

DIRECTIONS:

1. Cut the broccoli into florets. Chop the carrot in to small pieces. Wash the chopped carrot and broccoli pieces with water and strain the water. Get ready with all the ingredients.


2. Place a vessel and add 500 ml water and let it boil. Add the broccoli and carrot. Cover and cook for 8-10 minutes in a low flame.


3. Strain the stock with some carrot and broccoli pieces and keep aside for later use. Cool the remaining cooked carrot and broccoli in a plate.


4. Grind the cooled broccoli and carrot pieces to a fine paste in a mixer.


5. Heat butter in a vessel. Add bay leaf, cinnamon stick, cloves and star anise pieces. (Tip: Butter gives nice flavour to the soup. You can use oil too.)


6. Add finely chopped onions and salt. Saute well until the onion turns translucent. (Tip: Onion enhances the flavour of the soup.)


7. Add the stock containing broccoli and carrot pieces.


8. Add the carrot-broccoli paste. Mix well. Add 300 ml water.


9. Add crushed black pepper and mix well.


10. Cover and cook for 2-5 minutes. (Tip: Check for salt and pepper, if needed add more.)


11. Switch off the flame, Garnish with some coriander leaves and Serve hot!


ADDITIONAL TIPS:

=> I got required soup consistency. If soup is watery, add 1 spoon cornflour in 1/4 cup water, mix well and ensure there are no lumps. Add the cornflour mixture to adjust the consistency of soup. The soup thickens slightly.)

=> Finally, you can also add 1 spoon of fresh cream and serve. It enhances the taste of the soup and slightly thickens the soup.

=> I usually use less amount of dry spices. If you like you can add more.

=> I kept some broccoli and carrot pieces along with stock without grinding. You can grind all the pieces too.

=> You can also add some chopped garlic while sauteing onions, to enhance the flavour of the soup.
